    Victory Wild Devil

    This is the only beer out of that brewery that I actually enjoyed. It was an American version of Orval. Not over the top with bitterness with just enough hop flavor and the brett finishing it out. Much better than Hop Devil which was really disappointing.

    Sam Adams Irish Red

    Tastes more like a scotchish ale unstead of an Irish. Yes way too sweet for the style. Irish beers are dry be it stouts or other ales.

    What is a Lambic supposed to taste like?

    Well Lindeman's is a lambic. But as everybody else said they along with most other lambic makers sweeten their fruit lambics. Yes their Cuvee Rene is their only non-sweetened beer.

    That is what I did. Just pitch the Lacto 48 hours before the other yeast. You can do it at the same time too. Since the yeast is most likely the largest cost in the batch you might want to pour another batch right on the cake.

    I don't know about you but I wouldn't throw it out. There are a quite a few good beers that are bitter and funky. Orval comma Achel comma and Wild Devil come to mind. If anything its going to make the beer more bitter since the bugs will dry the beer out more. But that is if you like it...

    Flanders red?

    In the Gilda recipe sub the extract out for 6.5# 2-row (total) and a pound of corn and you got a great clone for Rodenbach. My batch is going to bottle (hopefully) soon.

    Don't know about home use but a very small but great micro brewery uses one instead of a HLT. :cross:
