    And that got me to looking at the definition for each (remember, I am new at all grain). I used the Brewer's friend Brewhouse efficiency calculator, which, if I understand the difference correctly, is actually a MASH efficiency calculator, regardless of what they call it.

    I think you will likely find, especially with a stout, that it may be a bit harsh at first, but that will mellow with time, and likely the stout will be the best with a couple of months conditioning. YMMV Lon

    The one I drank last night was actually pretty good, though not carbonated enough. Most of my beers seem to be fully carbonated in a week, but definately improve in taste at about the 3 week in the bottle point.

    Well, I've got the chilled one in a glass right now. It is barely carbonated, but really, doesn't taste bad. It's not great, but then again, this was my first ever from scratch recipe, so just being drinkable is a plus :) . I think I'll leave it as is and keep an eye on it, likely crack one...
