    What they used to do was take the second runnings and add yeast without boiling down It was called "small beer" which they gave to the kids. Now they call it Miller Lite which you give to your friends.

    It has morphed from real crappy sour bandaid to sour and thin tasting with a slight bitterness. JNJ has the same problem but his was not bitter.

    I'm voting on crud in the bottles. You said some were doneted. Were the odd bottles donated by a friend or were they yours. I have found that when friends give you bottles they usually don't rinse them. Also you should have used the one step first with a good hour or two soak to remove the crud...

    El Borracho All very good points. The most critical time is between cool down and transfer which I usually do within 10 minutes. That 10 minutes has been a killer for me. I want to try throwing on the lid after boil and cool in an ice bath thus lestening exposure time.

    I agree. I usually rinse my hands in the starsan solution when I pull out the funnel to transfer the wort to the carboy. And above all never touch the wort or anything that comes in contact with the wort.

    Maybe I should go back to what I did when I first started. Use ice in the wort to cool it, use all plastic, use one step only, no starters. It all worked great for a long time then BAM! Now I have an infection that's like stink on $hit.
