    Looking for a 7-8% abv recipe

    The biggest Irish Red I've ever tryed was 6.5%, but I love Irish Reds and high abvs. Have you ever tryed an Irish Red that big? I would love to try it! Anyway, after brewing for some years I realized that friends and family usually prefer (Is it sayd that way? I don't speak English) low abv beers.

    Do you filter your wort?

    I was wondering if any of you found any improvement in filtering your wort when pouring it in the fermenter. I never filter it and I don't even worry about leaving all the sediment from the boil inside the pot. I always thought that all inside the pot should go inside the fermenter. Prost!

    Blow-Off Tube

    I just used it twice whith big beers (OG higher than 1080 for me), and cause I didn't leave enough headspace in my bucket. Just used the first 3 days. 99% of the times I just use the airlock. Never had a mess.

    How often do you guys check up on your brewing progress?

    I usually pitch in the afternoon, that night, before going to bed I go to the beer and say "good night" and give her a kiss, next morning I go tell her "good morning" and give her another kiss. After that I won't see her in a month till bottling day.
