    This is just what I've experienced in every single batch i brewed. From week 1 to week 2 there's a major carbonation difference. Nowadays i just open my 1st bottle at 2 weeks. It gets way better after a month regarding head retention. But it's just my experience so far.

    From my short experience: under pitching is nasty and you surely can smell it when fermenting. Very strong fruity esters. I once under pitched Mangroves Jack's belgian Ale yeast and it was nasty even for a Belgium beer. Eventually it faded a bit but the beer was not what it should have been.

    Even when using wheight/volume there's an obvious catch: if adding 100 ml of water to 10 grams of sugar, the end solution will be 115,9 ml , as sugar has a 1,59 g/cm³ density. It's good info when making priming solution in a target volume that is easily divided.
