    I raise this recipe from the dead!!!! Haven't revisited this one recently but I'm teaching a few gents how to brew and have decided this was a perfect beer to achieve that end.. I hope somebody sees this recipe and gives it a try, delicious stuff!

    You under pitched, but I wouldn't fuss over it, it just may take longer to ferment, and then maybe let it bulk age a couple/few weeks longer to clean up after itself if there are off flavors..... You may lose some hop flavor in the aging, so dry hop a week before bottling or kegging.

    Anyone ever prime with maple syrup?

    My only concern with syrup for priming is that the sugar content of natural maple syrup varies from tree to tree, varies based on the summer/winter prior to harvest, and how much concentration was achieved via boiling for packaging. This variance could lead to over or under carbed bottles.

    Are you kegging or bottling? I can't see an issue with a shorter time as long as things aren't still fermenting, I've kegged it after 10 days total fermentation time and have loved it!

    @depper No need to clarify with gelatin, the yeast are welcome in a hazy farmhouse ale, carb and drink this one fresh, hits the spot after a bit of yardwork!

    The honey ferments out almost completely, and depending on the pepper used its rather subtle, all things balance so as not to be single faceted.

    7 lbs might work well, or get the Oregon puréed fruit, I think that it lends a bigger flavor

    When I brew my blueberry summer ale I use 5 lbs of fresh picked berries, I wash em, freeze em, thaw and smush them prior to racking onto them, it adds a week to 10 days to my grain to glass timeframe.

    And gloves too...... I suffered a severed tendon in my finger due to an exploding glass bottle. My finger doesn't straighten completely to this day.

    Hmm, I always just bottle off the keg after carbonating, no fuss and it goes rather quickly.... I don't have a bottling bucket so I'm sort of stuck bottling that way, never had an issue even with competition beer bottles
