    My first thought would be to increase the oats a tick in proportion to the rest, but then scale the whole recipe down to drop the gravity. I might play with it a little here soon and see how it stacks up.

    My brew house efficiency is actually at 87% but I adjust to 75% for recipe posting to make it easier for most folks to hit the numbers without undo adjusting. And yes, forgetting the honey will do it as far as low gravity numbers... Add honey into the fermentor and let it rip!!!

    I think it's the way beer smith calculates the first wort hopping addition that causes the issue, I never get complaints about over hoped flavor!

    I don't do 90 minute boils on anything but my wee heavy recipe! as stated in my original recipe a 60 minute boil is all that's needed. And as to the pils malt end, I rarely keep pils in the house anymore, I sub plain 2-row and to be honest though there is a taste difference I can pick up in...

    on most recipes that call for dry I just sprinkle in, but in my early days I used to rehydrate... But another container and thermometer use would often be a rushed thing so I just started monitoring my pitching temps closer and called it a day..

    This is basically what I did too, I find it works pretty good too! I can fit 3 soda kegs in my kegerator but have taps for two, the spare keg is usually carbonating up or lagering... I just picked up another kegerator so I'm doing a side by side setup with a coffin-box tower with the lines...

    @jlinz you didn't make note of a production run number did you? Is it possible your LHBS mishandled the yeast or was it mail order?

    Been there myself, you use star San? Give it a bit to clean itself up, no worries.. If that were the only option I'd rather dump it down the tub drain. But that's because I despise sour beers.

    I still need to go through my notes and see if the recipe is based on rager or tinseth hop formulas, this will go a long way towards calculating your adjustments. I've been so busy that I honestly forgot to check on it for you. Sorry!

    I've drunk more pints of this than any other beer I brew, it's a year round favorite! I've been hitting 1.010 on my gravity for about a year now. With the carbonation set to 1.05 volumes, I just nudge the perlick faucet open and essentially "sparkler" the beer to get a nice creamy head...
