    Nothing wrong with that at all. When brewing all grain it’s called sparging. People have differing opinions on squeezing the bag, when I was doing extract I was a bag squeezer. Not ashamed to admit it.

    It’s a good beer indeed. I wold stay away from nugget hops here and stick with more traditional English hops like Kent goldings, or fuggles.

    Could the lme be getting scorched in the bottom of the kettle. If you are using a propane burner, maybe shut it off while adding the extract and get it stirred in and fully dissolved before turning it back on.
