    I need a great fool proof 1st kit

    My first brew was a nut brown ale and it turned out great! Brown beers have a strong flavor and are "forgiving." It required steeping grains, but if you can make tea you can steep grains. It's not hard at all and nothing to be afraid of.

    Filter for oxygenating

    I just have tubing to a .5 micron stone. I don't think much if anything can live in almost pure oxygen at bottle pressures. I do sanitize the tubing though.

    Nut Brown, how does this look?

    I did the Northern Brewer's Honey Nut Brown Ale a while back with 1lb of honey at the end of the boil and it barely showed up at all. After swallowing a sip there was a subtle of hint honey and smoothness. If I did it again I would add a lot more honey. Your taste buds may be different though.

    Freeze the bottles when they reach the desired carbonation. That'll kill most of the yeast and prevent further carbonation. You could also freeze and thaw them a few times to really make sure all the yeast are dead. After that keep em cool.

    Did you purge the keg with CO2 before filling it with beer? Did you purge all gas from it again after filling? If not when you force carbed it you also force "aired" it.
