A few weeks later than planned, but finally getting to the Bergamot Pale Ale. Just mashed in.

Finally got the fermentation chamber replaced. Not a temp control conical, but it should be much easier on the back than the old chest freezer.

Got a pre prohibition lager in today. Great brew day except my old chest freezer fermentation chamber crapped out, so I’m trying to regulate temps with pitchers full of ice. Maybe the boss will let me upgrade to a few temp control conicals!🤞

Planning to brew 2nd imperial stout of the week tomorrow. A triple chocolate oatmeal milk stout that never lasts long.

Brewing a blonde and this monstrosity on Wednesday. Started out as a simple 4 grain stout until I decided to clean out my grains and started dumping bags in.🤞

Wife got me 3 bottles of bourbon country stout (2020, 2021, cherry wood), 1 Surly Darkness S’mores and 1 Surly Fifteen Belgian Strong Dark. Plus beer themed pajamas.

Last jar of 2021 fermented peppers is now hot sauce. Habs, ghost, black Panther and red torpedo.

3rd annual Christmas imperial stout tomorrow

Not brewing but I added apple brandy soaked oak cubes to my imperial birthday brown that’s been conditioning for 6 months. Beer went crazy when I added it. Haven’t seen this before, pretty sure it’s infected. Will still wait on it 6 more months and see what happens. 😐

Not the weekend, but I’m home on isolation with Covid so finally getting in my cream ale using barley from a local farm.

Finally getting to the toasted oatmeal Stout today after life got in the way and planning a cream ale for Friday.
