    White Labs California 5. I'm a little nervous about infection because the yeast came from a batch of Pale I made a few weeks ago. A little concerned that I may have picked up a bug when transferring the yeast from the pale fermenter to a mason jar.

    Good to hear it took more yeast. Mine finished at 1.035. I guess I'll pitch more and see what happens. It's way too sweet right now.

    5.2 Stabilizer. Thoughts?

    I use it regularly with reasonable success. Although this past tome I screwed up and used 1 tbls per gallon and his my of numbers spot on. I use my well water. Maybe for those that were not successful, a larger dose would work. I don't know, I'm not a chemist or a professional brewer.

    Cleaning bottles in the dishwasher?

    Not for Initial cleaning. The dishwasher cannot get inside the bottle. Plain and simple. Not for cleaning. Not for sanitizing. Just take the time and do it right..... Or keg.

    I agree with Maxkling on the fruit extracts. They are very touchy and often come out tasting like plastic.

    I have over 12' of vertical growth right now. Small flowers are appearing. Vertical growth has slowed but not stopped.

    US Grown Hops Shortage?

    Amarillo are definitely in shortage. It is proprietary and the the source is in some family/ licsensing dispute. Heard this story from my LHBS.

    I find the problem is that a lot Odis have day jobs that don't allow seeking education in places across the country.

    BJCP guidelines calls for a Brett flavor and fruity flavor. Dogfish Head Festina Peche a.k.a. Berliner weisse with peaches.
