    Perhaps I will take it out then and allow more drying time. I only air dried for 2 days and bagged and a few days later the bag is full of water. I pressed under 50lbs for 12 hours so that should be good.

    @passedpawn I think I read somewhere that you bag your cheeses. When you do that do you get a lot of water build up in the bag? If so, should I drain it on occasion or just let it ride?

    These were the instructions I used. I suppose they were more inspiration. But I pretty much followed their plan except I subbed for a wood base and used 6" pvc pipe (adjust all other measurements accordingly). http://schmidling.com/press.htm

    Wish you would have posted that a week ago. Found all my wife's old lab books from undergrad and I know there was one in there that would have met your needs but I can't remember the title or author and I've since donated them.

    Could certainly affect attenuation making your beers more malty than you'd expect. The wired probe thermometers are not waterproof which causes them to be terribly inaccurate. But you will still make beer and it will likely still be drinkable so RDWHAHB.:beer:

    I always moved mine and then let it set for about 15 minutes. But really it's not a big deal. The trub will settle to the bottom of the bottle. RDWHAHB.

    Looks like we had a couple of people pull their orders which dropped us about 600lbs. We were really close to closing too. Just going to have to keep dragging it out I guess. If you guys have any questions or concerns please let me know. I realize it is taking a bit to get this one finished but...
