What should a fermenting mead taste like?

My mead has been fermenting for 2 weeks and I just went to take a gravity reading. The good news is that the gravity is down to 1.030 from an OG of 1.080. The thing that concerned me was that when I tasted it, along with the alcohol, honey and yeast flavors, there was a sourness to it. Since...

    Suggestions for my next brew?

ok, so I just brewed. OG was only 1.030. Bummer. I guess I got poor effeciency with the grains. Or could it be something else?

    Suggestions for my next brew?

oops...fg should be 1.010. one more question...How much water can I expect the grains to absorb? How much water should I use for the mash and sparge if I want to boil 2.5 gallons?

    Suggestions for my next brew?

Ok, I messed around with the recipe a bit to come up with something I feel ok about as a partial mash. I also decreased the alcohol a little since I want a lower alcohol beer. I plan on using the texas two step method with my extract addition since many of my beers have come out a little...

Dark Mild Mild Mannered Ale (AG) (E) UK/US

I have a yeast cake from a Blond that I did with California Ale Yeast. Any thoughts on how this recipe would turn out if I used that yeast cake rather than Nottingham?

    Suggestions for my next brew?

Wouldn't that be true of anything I brew on the cake other than another blond?

    Suggestions for my next brew?

Sounds interesting...I was also thinking about brewing a mild. Any reason why putting a mild over the yeast cake from a Blond would be a problem?

    Suggestions for my next brew?

oh, and I forgot to mention that I'm not that fond of wheat beers or Hefs.

    Suggestions for my next brew?

I have a blond ale that is just finishing up in primary and I'm about to rack it. I'd like to simply pour the wort for my next beer onto the yeast cake from the blond. Any suggestions for types/recipes? I'd like something that: will be ready quickly (I'm getting a bit of a late start for...

    Temp. Question

I checked the gravity and it was 1.015, which is pretty much right where it should be, so I racked it. It looks and tastes great...wooohoo! I'll probably bottle in a week or so.

    Temp. Question

Well, it has been a week and the fermentation is slowing way down. I'll take a gravity reading in the next day or two and if it is ready I'll rack it, but everything seems to be fine so far.

    Temp. Question

mmmm...beer.... So, last night I brewed up a stout and as I was chilling the wort I noticed the electric thermometer that I was using seemed off. I tested it out in some cold water and sure enough, it wasn't reading accurately. It was late and I don't have another thermometer, so had to go...
