    The only thing I’ll do differently next time I brew this sometime this summer (I keep it in regular rotation) is to do an open fermentation as I have seen and read that the brewery performs for this beer-it should only enhance my already amazing Weissbier!

    You could also use Fermentis 34/70, it’s a German Lager yeast and should do well in this and suggested as an alternate by the OP-in fact it’s what I plan on using when I brew it warm this summer so I can have it ready for the fall.

    5 gallons of Caramel Abbey Amber with Wy1056. Pitched Sunday and checked it after lunch, already down to 1.014 so ramp up for D-rest until Sunday then into a keg to bulk age cold for ~3 weeks or so.

    Brewing 5 gal batch of Bavarian Pils now. My adaptation of the published recipe for the NHC 2018 champ-using a single decoction mash and almost ready to start boiling. Should be a good last lager for the cooler season.

    Sanitation: How long does Star-San stay good for (mixed up)?

    I think it imparts an off flavor to hoses if they’re left to soak for extended periods. I’d wash, run thru Star San and remove to drip dry.
