    With the grain bill that you posted, you're looking at 1.059 OG with a color of about 5 SRM... assuming the Munich you used is around 9 SRM. Could it have possibly been a dark Munich? Those are usually around 15 SRM, which would darken things a little. If you're looking for a very pale ale...

    If it were more than a couple weeks, I'd be concerned. A few days, though? That won't make a noticeable difference. Just keep it in a cool, dry place if possible and you should be good to go :mug:

    Filtering hops and trub before fermenting

    I dump nearly everything into the carboy as well (except the obvious hop pellet sludge), and the beer comes out just fine. However, if I started to re-use the yeast, I think I might change my method.
