What is your target FG? And what temperature will you be mashing at? The honey will certainly dry it out while the wheat and possible carapils will help give it some body. If you are going to add the carapils I wouldn't replace all #3 of 2-row, maybe #1 carapils #2 2-row.
I think Sterling or Antanum would compliment it nicely. Both would give a nice citrus aroma, with Antanum being slightly more potent. However, Sterling would give a nice spicy characteristic wild a little more mild citrus. Cheers :mug:
Looks tasty. Id (personally) shoot for a little higher mash temp, maybe 150, because I find mashing that low makes my beer very anemic. Also, maybe back off a little bit on the carapils, 1lb should do the trick. Cheers! :mug:
Ive tried this with ginger ale and it turned out pretty well. I used caramel 120 once for some color and Ive also used Maris Otter just to see what happened. Pretty tasty!

Two ounces soaked oak chips for 3 weeks in the secondary worked pretty well for me. Turned out a stout with a nice little bit of whiskey barrel finish.. Cheers! :mug:
