    Headed to Dallas

    Besides those mentioned, I'd add Franconia and Lakewood to the other breweries to checkout from Dallas. Austin Beer Works and Jester King from Austin. Lots of great beers being produced in Texas. And several craft breweries currently set to come on line soon.

    Star San is making me think twice about home brewing

    I make sure there is plenty of Star San foam left in the bottle when bottling. it pushes out the top when filling and sanitizes the bottling wand. Plus, I think it enhances the high notes on the aroma of the beer and provides a clean finish to both lagers and ales. Mmm...Star San!

    No visible fermentation activity after 12 hours

    What yeast did you use? I've had US-04 and US-05 take up to 36hrs before showing signs. Nottingham seems to get started a lot faster. However, I've never rehydrated. Give it some time. Relax. Don't Worry. Have a Home Brew.

    milk jugs as small fermenters?

    A #6.5 Drilled Stopper and airlock is what you want. I've done it with cider, worked good.

    Have your next batch ready as soon as the fermenter is empty. Trust me. One of my fermenters has had a continuous batch of this going since my first batch was conditioned. I need to start buying the ingredients in bulk to save some money.

    Pulled some to hydro test, it looks like its done. Force carbed some in a 1L coke bottle. It is not clear, but I never cared about clarity. Well balanced, cascades shine. I need more ingredients so i can start another batch when i keg this one.

    Got my first batch of this in the fermenter last night, I did a BIAB method. The hydrometer sample tasted great. Can't wait to try this one. I wanted to have it ready by Thanksgiving for family/friends, but couldn't get it brewed soon enough. Guess I'll have to try to save some for Christmas...
