American Pale Ale Three Floyds Zombie Dust Clone

How long is everyone waiting to bottle condition? Three weeks like above seems a little long (to me). That, or I'm just impatient here.

American Pale Ale Three Floyds Zombie Dust Clone

Just bottled this tonight and it was tasting great. I've had the 'real deal' and this is definitely close. Hoping to do a side-by-side once my bottles carb up. OG was 1.060 (ran out of DME when i 'topping off' :) FG was 1.012 (finished a little lower, mashed a bit lower, so expected this)...

    Giant massive fail!

Damn the thermometer. I was looking forward to trying this batch, Kevin! I'm using the Polder Digital In-Oven Thermometer and will say that I'm very happy with it. The cord is plenty long so i can leave the sensor deep in the mash, close the lid, and sit the display on top of the insulated...

    BIAB Brewing (with pics)

I haven't experienced any issues with tannins due to crush. I always double crush at the lhbs.

How large of a BK do you need for 5 gallon BIAB?

I use the same for my BIAB. The last two beers (10% Barleywine & RIS) have made me wish I had a 15g pot. Overall though, I'm quite happy with my 11G bayou classic. A 15g pot might leave too much headroom during the mash making it difficult to maintain a steady mash temp without adding some...

American Pale Ale Three Floyds Zombie Dust Clone

I'm freeing up some room in the chest freezer this weekend and I think I'll be brewing this on Sunday. Will be nice to have a fresh hoppy beer around again! Looking forward to my first all citra recipe. Thanks, Skeezer!

How off will your OG reading be if you pull sample from top of carboy?

Temps in the 60-69 degree range shouldn't affect your hydro reading to any great degree. IIRC, temps in the 70 degree range only change the reading by .002 or so. Pretty insignificant, as far as I'm concerned.

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Brewed this one up yesterday (the power came back on in time to brew!). Brew day went relatively well, but I'm really getting tired of BIAB'ing these big beers. I hit my volumes but fell a little short on the OG (got 1.090 instead of 1.095). Pitched a nice sized started and aerated it well...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Great! ;) I'm brewing this on Sunday via BIAB. I don't have a valve on my kettle so I'll be syphoning out to primary. Sounds like I'll have to unclog my syphon a few times...wish me luck.

I need some input about Mashing.

1LB of Grain is generally equal to .6LBS of DME. I think what the previous poster was saying is that if you do not hit your gravity reading pre-boil (meaning you achieved less efficiency than the recipe called for), add DME to the boil (with about 15 minutes left) to reach your desired OG...

    BIAB Brewing (with pics)

I definitely recommend brewing in the BIAB style. I just brewed the hopslam clone Seven references earlier in the thread. I tasted the brew yesterday prior to dry hopping and it smells and tastes FANTASTIC. I did need to add 2 lbs of DME to hit my target OG due to efficiency/capacity...

    I didn't hit my OG!!!

Ding, ding, ding, ding!!! I've been employing this practice for the last two brews (still new here) and have 'hit' my target gravity spot on. Before I picked up Ray Daniel's "Designing Great Beers", I would just mash, boil, ferment and hope for the best. Now I know what adjustments to...

    and another BIAB Efficiency thread...

I'd like to give this a try, but my only other kettle is 5.5g. With a grain bill of 20.29lbs, already 'soaked', I don't know if a 5.5 gallon kettle would be big enough to handle the wet grain plus another 2-3 gallons of water. How could I figure that out (rather than trial and messy, messy ERROR)?

    and another BIAB Efficiency thread...

Thanks for the responses so far, guys. Yes, I double crushed my grain at the local homebrew shop. I seem to get a good crush, all husks removed and a granulate like flour. I'm using a homemade voile bag that is plenty large. Despite the kettle being maxed out, I was able to stir and...

    and another BIAB Efficiency thread...

I brewed up a Hopslam clone yesterday and for the second** time now I'm a bit disappointed with my low brewhouse efficiency (62.27% per brewersfriend.com) Here's the recipe: https://www.homebrewtalk.com/f69/all-grain-hopslam-clone-219599/ I mashed with 8.5 gallons of Deer Park water (my...

    American IPA Hopslam Clone

I went back to the home brew store yesterday and picked up the 1/2lb of honey malt, so scratch my earlier question. I'm still interested to hear any opinions on what hops worked best for dry hopping. Any takers?

    Biab questions

Seven's primer on biab is really helpful. I'd read that thread to help hit your volumes spot on. Total water = batch size + grain absorption + evaporation + trub loss .074 x grain weight in lbs = grain absorption Evaporation estimate = 1 gallon per hour of boil Trub loss = .25 - .5 gallons

    American IPA Hopslam Clone

Bought all the ingredients for this recipe today. Well, all ingredients minus the honey malt (just plain forgot it!). Looking forward to brewing this one up next weekend. Can I sub in extra honey for the honey malt? I bought a total of 32oz of honey, so I was thinking I could just add...

    Lost Half My Yeast

I always gradually crack the tube open to release some CO2. Almost everytime I shake the vial, I release some more. By the time I pitch into the starter, no explosions, no surprises! Yeah - What Revvy said!

Brew day 3/24 has begun. (The Dead are playing)

Brewing up a barleywine tomorrow. +1 for early morning brewing! Will take pics and add tomorrow!
