BENNY GO HOME!!! Although the natives here call me a BENNY.

Yup. Once you've seen the industrial corridor of the NJ Turnpike and Newark Airport you've seen the whole state. Might as well turn around and go home.

True if you subscribe to a North/South paradigm. But if you subscribe to a North/Central/South paradigm the lines move, and are subject to varied opinions. I grew up thinking of 609 area code as South Jersey, but back then there were two NJ area codes, 201 and 609.

People down here don't think Toms River is in South Jersey. (You and I know South Jersey starts at the Raritain River (Driscoll Bridge)).

Joe's Ancient Orange Mead - JOAM

Patience Grasshopper. :) I used to rush JOAM. It's better if you let it sit for a few months. It will be fine. My yardstick (meterstick?) at this point is to let it sit until the oranges have sunk. Usually 3 mo. Bottle and let it age for a few more months. JOAM can't be rushed.

Do yourself a favor. Start out with a simple stout or IPA. The heavier flavors will cover up small mistakes. If you start out too ambitious you'll be disappointed and may give up. If you're going to start alone get a kit from one of the sponsors here. They come with detailed instructions and...

+1. Nothing works like watching someone do it live. Follow the process from crushing the grain and making a starter (if used) through bottling/kegging. The down side is you'll pick up a lot of the shortcuts and bad habits they have, but if the beer is good who cares? And you can always read a...

    Cranberry/Apple Cider

The cranberry makes it pretty acidic and it takes forever to start fermenting and it's a slow fermentation. I let it ferment out, rack to a bottling bucket and add priming sugar and bottle. Like all Apfelwein it need to age to taste decent. I give it at least 6 mo.

    Cranberry/Apple Cider

Sounds good. Welsh's is what's available around here so it's that or nothing.

    Cranberry/Apple Cider

Try making Ed Wort's Apfelwein, but leave out 1/2 gallon of juice and add 5 cans of this.
