Just curious. You have had krausen hang around that long? I've never seen that. It has always dropped after few days to week or so. Long before I'm ready to bottle.

I like using exact amount of sparge water BS tells me to use. Plus taking into account the loss. Program hits it everytime. I just sparge until dry. End up with right volume

I’m making a pretty standard Pale Ale and would like to have a mild oak flavor in it. Just a bit. Never used oak chips or cubes etc. thoughts on how much to use in fermenter? When to add? I definitely don’t want it to overpower. What methods would you suggest? Thanks for the help.
A couple brew days ago, I had my first stuck mash. I ended up pumping back into the mashtun valve. Had to go forward, reverse, forward, reverse a couple times to get it unstuck. If you don't have a pump, I'd imagine it would work manually?
I find when I stick my head in my fermentation chamber, I get a smell similar to what you are saying. CO2 most likely. It kind of makes you cough. Sorta like taking a whif of vinegar. Not the smell, but the cough effect. I had not experienced that prior to getting the freezer for a ferm chamber...
Missing my Preboil gravity with my HERMS setup was mostly all due to me not stirring the mash. I stir several times now to ensure nice even temps throughout.
I'm assuming you are also running your sparge water through the HERMS coil to clear out that trapped wort? If not, you'll want to do that...
