    My couple batches I've gotten up in 1.090 range pitch nottingham, ferment at 64ish (basement temp), let it go to 1.010 or less then backsweeten at bottling... I store the bottles right away at 32ºF for still or let carb for a couple days using plastic bottle for a guage, I used 2 and recomend 3...

    I would assume if you are going for an orangy citrusy blonde I would get my hands on some orange blossom honey... I usually add half my extracts at begining of boil and half at end, last 5 min... after playing with my cream ale this spring I would reccomend an appropriatly citrusy hop like...

    I don't get much fruity/sweet flavor... mostly the candi and sorghum twang... I did half the sorghum and half the candi at begining and half at end plus used notty... I'm curious how some tapica syrup in place of the sorghum would do...

    I started my lemonade today... 1 gal. Simply lemonade 8 oz. Corn sugar (dextrose) 1/2 pkg. Nottingham ale yeast Og 1.072 or 9.5% potential abv. I am going to let this ferment out and see how it does... and decide if I need to backsweeten, carb etc...

    I know this post is old, but I think I remember reading somewhere you want to boil for min of 45min. Something with extracting enough alpha/beta acids to act as your preservatives or something my fream ale last summer was a 45min boil and only beer to not age well...

    Effects of light & Heat

    I have not tried it but I have a packet of llalemands saison to try in the higher temp range... I agree with the comment that if you dont want to, or cant adjust the environment to fit the brew you have to adjust the brew to fit the environment... good luck!!!

    Making hard cider from frozen concentrate.

    Last batch I did out of concentrate I bought 14 or 15 if I recall and 3 were for back sweetening, the rest made the juice, added 1 can of concentrate without the water to. Bump the og... ended up around 9%...
