    Two stage Ranco controller has a out 10 amps max current thu it. You could not use it in HLT. Not enough power Scotty :) Two stage Ranco works well for fermentation chamber.

    Average Turkey Fryer is about 60,000 BTU. This Range is 90,000 BTU. You should check your gas line if it can supply enough gas when you use it. Other than that it should work. With 90,000 you should be able to boil 20 Gal depending on your heat loss. Some vent over it might also be helpful.

    Strange brew 2.0 was rewritten in pure Java. I like Java but I am not that found of writing client GUI apps in it. I thought that QT toolkit or GTK toolkit could do the trick. They are cross platform. Brew Targer is in C++ with QT Toolkit.

    I run BeerSmith and ProMash thru Wine on Linux. It run pretty good. So if you can run Wine in OS X you can run both tools.

    I think first you should clean your keg with cleaner like PBW. You can keep your cleaner in the keg of some time. Then you give it a good rinse and after then you sanitize it with StarSan. You do not get any benefit with prelong contact time (over two minutes)

    DIY Stirplate help

    Not all computer fans are created equal. Do you have another fan to try? I had better luck with smaller (size) fans and with 9v power supply (12V would be the best in my case). Do you have your fan wired correctly? Computer fans does not like reverse polarity. Try switching your wires.
