    Yeah that's what it tasted like - white wine. I really don't like white wine. I'll definitely need to back sweeten this stuff. Maybe I'll work on another batch with the WLP775 soon while we still have fresh cider available.

    Pitched 2 days ago. Time to worry?

    I just started my first batch of cider over the weekend and it took nearly 36 hours to show any signs of activity. I used 71B-1122 yeast. At 48 hours (last night) it was bubbling a little faster, about one "burp" from the 3-pc airlock every 8 seconds. This morning it's about 1 burp every second...

    This morning I finally saw activity in the mead & cider airlocks. Slow bubbling, but it's doing something! The beer is starting to clear out from the top down. Very little activity on that airlock.
