    The pressure in a closed vessel changes with temperature, do you keep the nitro tank in the kegerator? If so, that's probably what made the gauge go down.

    1.080 to 1.026 puts you at about 7% ABV. I don't think champagne yeast are required. I would let the temp rise to about 70F, and see if that drops it a few points. Let it stabilize again, then you can add priming sugar and the US05 that's in there should carb it fine.

    I just got one of these to heat my ferm chamber. While it bills itself as an infrared lamp, it puts out a ton of visible light. Which of course makes me worry about UV output as well. Anyone have any clues as to how to find out the UV output of this puppy? Thanks.

    Conventional wisdom on here is that unless you filter, or let it settle for a really long time (over 6 months) you still have plenty of yeast to carbonate. It probably just took these guys 5 total weeks to do the job, and the pinch you added probably didn't really do anything. Revvy's example...

    Anyone looking to get away from paying for bottles, try calling restaurants around you to see if they recycle. The restaurant I work at goes through 100s of bottles a week, and they'll just be sitting around out back until the recycling place picks them up.

    Specific gravity is specific gravity, no matter what liquid you are measuring. You can check the accuracy of your hydrometer with distilled water at whatever temp it is calibrated to (usually 60F)

    Are you saying you put 1oz of starsan in the carboy with only 2-3 gallons of water? If so, you are making it about double strength. I have no clue if this would create any off flavors or not, but I don't think it's a good idea.

    Did you add top-off water to the fermentor? If so, the wort probably wasn't mixed all the way and the 1.044 was incorrect. Now the start of fermentation has thoroughly mixed the wort and the 1.050 is probably closer to correct OG. Also, if it was an extract kit, and you filled to the correct...
