    Checking brew during fermentation

    I had to do that with my last batch. I opened it twice, and didn't find it to cause any problems. I just wouldn't leave it open for more than a few seconds, though.

    I was wondering if someone could shed some light on a 2-Stage Method of fermenting. I (as well as a lot of other newbies) only use a 1-stage fermenter, but was wondering if there is an improvement on clarity, and/or more "wiggle room" to play with flavors. Thanks!!!

    beer recipe

    Hi All! I was toying with the idea of making a Vanilla Walnut Brown Ale. Has anyone ever used any type or form of nuts in their brew? I've read a lot of theories ranging from toasting some chopped nuts, to using alcohol-based nut extracts. Any advice is greatly appreciated!!!

    Sam Adam's Octoberfest, Magic Hat #9 (which is probably going to be my next batch), and Blue Moon.....of course, knockin' back a 40 of St. Ides every now and then is fun too.....heheheh :D

    20 days and still fermenting?

    I'm kinda new to this too. My first batch I had no problems with. My second batch I tried an Irish Stout, and got no fermentation for the first 4 days. My fermenting temp. was around 50, which I was told was too low. I warmed the fermenter up by just leaving it in my living room overnight...

    My yeast question is what the real difference is between using liquid yeast vis a vis dry? I read it's really a matter of convenience over taste to use the dry...is this true? Thanks!!!

    I was 2 oz. of hops...cam't remember the type, but the instructions said it was 1.5 alpha. They were added in the beginning, so I know they were meant to bitter, but I added 8 oz. of baker's chocolate to the boil, and 4oz of raspberry flavor at bottling, and the chocolate flavor's really masked...

    Heheh....ml....we're still backwards I guess....I use 12oz bottles, for what that's worth. You could also try leaving more room at the top of the bottle when you fill them....

    the only thing I could possibly think of is that you're bottling too soon after fermenting. But if your SG is fine, then...hmm...what are the priming sugar measurements you're using for carbonating?
