if I was going to build a space saving brewstand I would model it after a TopTier but make the burners fold up to save additional space. However, that looks pretty cool. I just don't like the idea of getting out the ladder to mash in. I've spent enough of my life on a ladder.

How long has it been in the primary? I would not stir it with a spoon, if you feel the need to agitate the wort simply swirl the wort around in the carboy.

I would add the honey and orange peel to the end of the boil at 0 minutes, so that they will retain their flavors otherwise the will just be boiled off.
