Teaching a Homebrew Class (community ed)

One thing, I've noticed that some people tend to present some things as fact, or as the only proper way to do something, when it's really just the way they prefer to do it or because they don't fully understand other ways of doing things. You could maybe explain why you prefer doing diffrent...

    brewing in the rain

Not as much of a concern about infection (can cover the brew pot while cooling), but more of contamination from polutants. Rain and snow will carry polutants from the air. Even if you are very far away from poluted areas, the wind can/will carry them thousands of miles. I've rigged up a...

    skipping the secondary

I've got a couple reciipies that go straight to the keg and get force carbed. They are ready to drink in less than a week. Safeale ferments fairly quick and is highly floculant. I try to keep it in primary for at least 10 days, but 5 or 6 days is usually sufficient. Other than that, everything...

Homebrew Beer filter. No more secondary Ferm?

$100 is pretty high to me. I picked up a shorter filter housing ( less waste volume) for $20 at a local hardware store. Forget about the mega marts. Haven't gotten around to using it yet. I'll only be filtering beer that will be going into kegs, unless it's a hefe or dark beer of course.

    Racked off a bit early

I was prety sure I was all set. But considering I've got plenty of yeast to harves from the airlock, I think I'm all right.

    Aluminum or stainless steel

Aluminum is fine. The study that caused all the fears of aluminum was flawed. It was assumed that aluminum cause ahlsimers due to high levels of Al in alshimers patients, but it turns out that alshimers causes the elevated levels of Al.

I froze yeast, revived it and its fermenting !

I believe the glycerin helps to keep the yeast cells from rupturing.

    Racked off a bit early

So I brewed yesterday. I've only got one Franken Tank (14 gallon fermentor), which had a brew from a week and a half prior. So I had to transfer to two carboys while I started cooking this new wort. When I opened the fermentor I saw the krausen hadn't fallen yet. There was 6 pounds of honey in...

    Natural Spring

Depends on the style and ammount of hops used. There are many articles and threads dedicated to water chemistry. Too much info for a quick reply.

Potential new way to air into the wort.

Shouldn't have to pay more than $7 for a small aquarium pump.

    I want more head!!!

Try adding a little wheat to the recipe. Your equipment doesn't go thru the dishwasher with a rinse agent, does it? This will break up the protiens that create the head. The glasses will have the same affect if they run thru as well. My equipment and glasses rarely touch soap. Scrub with hot...

    Corking Belgian Bottles

Do you have the same style corks that come in the belgans? I haven't been able to find them, only the plastic top or all plastic ones.

    Copper racking cane?

You should be all right as long as you keep it clean, like anything else. Run some hot white vinigar thru it before using it the first time, and every now and then. Veritgris (the green build up) it toxic. I've used copper as a chiller to dispense a keg. Others have claimed to be doing this...

    Liquored up Oak Chips

I also recommend not adding the burbon. Drain it off and add only the cubes. Worked out well in my chocolate oatmeal stout. Strong burbon nose, but subtle on the flavor, the stout still comes thru. The cubes hadd soaked for 7 or 8 months, and the stout sat on the cubes for two and a half months.

    Maris Otter malt

thanks Delboy, I'll look into that.

    Aluminum Bottles?

They could easily be painted. A light sanding with a curved block would be good. I might have to find a br locally that serves theese. I've handled a couple empties before and they are rather stout for a mega brew bottle. I'd say 5 to 10x stronger than their glass counter parts.

    twist offs

Brewman, I've got a very similar capper and it works great. I was using some unibrou bottles for a while before I realized they were screw tops. They worked out fine. I've even used wine bottles with that capper. Granted one of them turned into a Sea Monkey Ale, but that was probably more of...

Any reason the CO2 needs to be in fridge?

Only reason for it being in the fridge is astetics (so you dont have to look at it) and so you don't have to drill a hole in your fridge.

CFC peeps - talk to me about cold break

I thought I remembered reading in one of the brew books that the cold break contains stuff that's good for the yeast during fermentation. I just let it go into the fermentor. It's usually to late at night (in the morning), and too much to clean to wory about gettting the cold break out. Haven't...

    How do you dryhop?

Just don't try to get every last drop of beer (which should apply anyway to prevent carrying over yeast) and you will be fine. I've had to cut the plugs in half to get them to fit in the carboy.
