    Starting with extra water to account for evaporation and losses to trub would be a beter idea. Or adding after the boil if if you don't have room in the kettle. Unless volume was lost due to adding something later, like dryhopping, adding additional water won't really affect what you were...

    If you're using an imersion chiller you'll be all right. If you are using a plate chiller or counter flow, you may run into issues with draining speed.

    Anyone use a decoction mash?

    Are you doing decotion mashing by heating up more water? Or by drawing off thick mash and boiling that? I was planning on a tripple decotion by pulling thick mash twice, and thin wort the final time for mashout. This was going to be for a doppleboc.

    I just picked up some coriander at a speciatly food store, then went over to the Indian food store to look for a few things the other place didn't have. Picked up a 7oz bag of indian coriander for $1.78, dried chilli's $2, all kinds of crazy spices really cheap.

    Drilling your stainless pot...

    I used the bazooka t for a bit and had serious problems trying to drain after the boil. Using a stainless braid worked a lot better. Altho if you are using an imersion chiller not such a big deal, with a counter flow 25 minutes to drain the ketttle can be a problem.

    Counter Flow Cleaning Question

    Run hot vinigar thru it. If it really starts to turn a green/blue, use some new vinigar. Then rinse it well, cap it off and your good to go.

    Siphoning without a autosiphon

    I fold over and pinch the tube to stop and controll flow to prevent splashing in the carboy. I got a long piece of tubing so I can transfer from a high counter to the floor and avoid touching a portion of the tubing that will be submerged in the beer.

    Paintball CO2/NITRO Regulator

    I built a small rig that runs off a paintball tank (with a regulator) and a small chiller that has the tap on it. Protable dispenser and chiller. I may put it into production. All said and done it's still cheaper than that regulator.
