    Temp control during fermentation

I live in Southern California, and even this time of year the temps in my upstairs condo are around 80F. I realize that temps in this range can produce some undesired fruity flavors, especially because the fermentor is going to be warmer than the ambient air. The problem is space. I don't...

Priming - Lesser of 2 evils

For those of you that do a secondary fermentation and bottle - Which is worse, to prime in the secondary and disturb some sediment or to transfer to a bottling bucket and aerate your beer?

    How did you find us?

My work hosts an annual brewing competition. To help the newbies they have a few classes about extract and all grain brewing, and this site was recommended.

    Cheers from Southern California

Thanks for the welcome greenhornet. I lifted the name Fenster from The Usual Suspects, not sure about the German meaning. Time will tell if the first AG success was skill or luck...

    AG set up questions

Hi Everyone, I’ve just started brewing and am gathering an equipment list for a 5 gallon all grain system and have a few questions: 1) The AG porter I brewed was a one step mash infusion – will this technique limit my future brewing choices? 2) I am leaning towards a 5 gallon Gott...

    Cheers from Southern California

Hi Everyone, This is my first post and I’m glad that you’re all here. My only reference until now has been Papazian. I have been bitten by the brew bug since brewing two batches with some friends. The first was an extract German Alt and the second an all grain porter, both of which were...
