    But the Maltose Falcons article states that yeast only produce ethanol under anaerobic conditions, meaning that you DON'T want O2 in the wort (assuming that you have made a big enough starter).

    mrk has summed it up pretty well. A 1% ethanol solution will not be antimicrobial by itsself. The antimicrobial effects of a brewing beer that has reached 1%ABV will largely be due to the fact that there are millions of yeast cells competing for nutrients, and not due to the alcohol...

    I brewed an alt on Oct 7, OG 1.062. FG 1.023 on Oct 20 and 21. Transfered to secondary and got another cake on the bottom of the carboy. Today I go to dry hop and notice some slow activity in the airlock. If fermentation is complete, what are the bubbles?

    #2 is describing a vorlauf. Many people pour the runnings over a large spoon to avoid disturbing the grain bed at this point. The original post refers to a recirculation 20 minutes prior to runoff, which is not really a vorlauf to me...not sure what that is.

    3rd batch, still have issues

    "Maybe put a second pot on the stove and use a second burner?" Or straddle one pot between two burners? That's what I had to do last weekend to boil 6 gallons on my stove...oh yeah, I'll be buying a hurricane burner soon too! Took two hours!
