    I'm going to brew a hefe this weekend using around 7lbs of wheat DME. I have crystal 15L for steeping grains. Any suggestions on how much to use? I have a pound.

    Thanks to this board I know to expect my DME to clump up when I add it to my water. What is the best way to mitigate this effect besides adding the DME very slowly? Wire whisk? Do the clumps sink or float? Thanks!

    Trying to brew under 21C/70F...

    2L soda bottles filled almost full with water and frozen can be used to cool a water bath that your fermentor sits in. Depending on ambient temperature you can definitely achieve a 19C temperature, but you will need to change out the frozen bottles frequently.

    Maltodextrin in a Hefe

    I see a lot of extract recipes going around that are pretty much just DME and hops. Is anyone adding maltodextrin to their extract hefes for some additional mouthfeel? Any comments on its usefulness?

    Thanks for the replies. I wound up losing a gallon and topped off with 1/4. The SQ14 performed admirably.

    I'm going to use my bayou classic for the first time today. Planning on boiling 6 gallons down to 51/4 in an hour. If I lose more volume than expected to the boil can I just top it off at the end with no ill effect?

    I usually see it referred to as flameout, if that's what you're talking about (when you kill the heat). As far as the late addition, it helps keep the color of the beer light and you don't have to use as much hops. Search for "late addition extract" for a wealth of information...

    I'm open to skipping the steeping grains, just though they might add some body and head retention. I don't want a watery beer...I'm looking for something like banana shake! Thanks for the info re: steeped oats, I won't waste the effort. Crystal sounds like a great idea to keep the flavor...
