    How often do you brew?

    Two 5gal batches every three weeks. Bottle on Saturday and brew on Sunday with the freshly available fermenters. Keeps us busy and dizzy.

    Presanitizing

    I was about out of sanitizer on brew day (2 weeks ago). I elected to sanitize my secondary and relevant equipment then. Everything has been sealed in vacuum sealed bags (carboy top sealed and rubber banded). I guess I'm asking if this is an acceptable practice or should I wait to resanitize...

    Super fast fermentation?

    Should I add some yeast to correct the problem? There is about 1/4 or more of "cake" at the bottom of the secondary.
