    Only my own experiential research... 20 hours got me a pleasant tartness and a PH around 4.95. An earlier batch i did sat for about 10 hours with almost no noticeable affect. Then again my 20-hour rest was done outside in the kettle (lid on) in the hot sun, so that probably sped things up a bit.

    Pulled the trigger today on the 1/2 bbl SS Brewtech Unitank. Chose that over the Spike due to my reservations around that gasket and the cost being comparable once all the accessories were factored. Hope that was a good call, time will tell.

    Thanks for the reply @Morrey. My two main concerns are 1) the removable lid of the Spike vessel - not sure I like the look of that seal and the associated management. And 2) supposedly the SS vessel was rated up to 30 PSI, the Spike PRV looks like it is set for 12-13 PSI. Right now I'm leaning...

    Interesting. I don’t even know what type of “2 row” the LHBS gave me. Next time i’ll do this batch with a specific grain bill put together on NB or something to get more control of what goes in.

    Just brewed this up. Color was a bit darker than expected, even at mash out. i was expecting golden, but it was more on the caramel side. Question- is there a difference between 2row and 2row pale malt? Edit: everything went well though. Hit all my numbers. Looking forward to trying this one!
