I think this will be very dark and opaque. However, with 6 weeks of bulk conditioning, it will be good.
Your ratio on Rye is high, but if you are diluting it will taste just as such.
What's stopping you from AG? Boil volume? Mash tun size? If you can I'd suggest going all out.

The flavor really is very similar extra light to dark in extracts. Main changes are from brand to brand. Some brands have different fermentability characteristics, which is the main perception of body in beer. Look for the most fermentability for a lighter body.

Also try a larger boil and late extract addition. Add one lb at 60 min as usual, then save the rest to add at 15 min.
You can use DME (powder extract) as it tends not to scorch as much, makes a lighter beer, and just taste less extract-ey.

FWIW I dump my sparge water right on top of the mash as it is actually still draining. Then stop the valve, stir, sit for 10 min, then repeat.

You were still right. You boil off bad compounds, isomerize acids, kill bacteria, or anything else living for that matter... The list goes on.
But a reason for knowing exactly how long your boil is is for hop utilization calcs.
