    Our faithful family dog passed away yesterday. He was a German Shepherd named Dante, so I figured I would make a German summer beer in his memory today. Noble Old Man D's Honey Hefeweizen.

    Bottled yesterday, beautiful color, I used gelatine to clear. Good taste, though a little astringent. I can see the need for a bit of conditioning time. I think the astringent grapefruit flavor will give way to the strawberry underneath.

    The second of your recipes I am looking to try out WildGingerBrewing I was wondering if anyone has tried smoking the pecans, like in a meat smoker, instead of roasting them. I'm wondering if you could extract maximum smoky pecan flavor that way?

    Racked into secondary on top of strawberries yesterday, there was a bout a gallon or so too much beer to fit in the bottling bucket with all the strawberries, so I figure I will let it ferment on its own and add back when I rack to tertiary.

    Thank you for the response. The grain bill only came to 5.25 lb for a 5 gal batch, and I wanted to make sure. What do you think the pre and post volume was on your boil down liquid? When did you add the boiled down liquid back to the boil pot? During cool down?

I had a burner malfunction and was only able to do 1 sparge and didn't quite hit my OG, but it being my first AG brew day I think it was a success.     You mentioned earlier in this thread that you are no longer doing 2x 10 min. dunk sparges and have condensed it to a single sparge. Could you clarify a little? Are you doing 1x 5 gal dunk sparge for the same duration and temp? or have you gone to a pour over sparge at the same temp? I am brewing...

    I am going to try my first AG brew, going to BIAB, and will be picking up ingredients on Friday for the Wild Strawberry Blonde by WildGingerBrewing. My wife and sister are pretty excited about this one and are looking around for good deals on fresh strawberry.
