    Yet another new guy post...

Interesting, I didn't know that about the 15%. I was worried after I started the first batch because I read (after already pitching) that Champaign yeast "is a sledge hammer that skyrockets abv amd blows all flavors out of the water" but was pleasantly surprised when it ended up sweet, flavorful...

    Yet another new guy post...

Not to undermine Bernarsmith, as he has a lot more experience than I, but my last two batches were both high gravities (first was 1.146(almost 6lbs to a gallon) and my current one started at 1.158). Both fermented/are fermenting very well, while the first batch (1.146) took 9.5 weeks to ferment...

    Yeast

I had thought about distilling mead, but decided to try distilling a neutral sugar wash amd then age it with the same spices I would use for my mead in an carboy/oak barrel and then sweeten with a little honey. With the proper amount of nutrients and DAP, is it possible to get a decent 20% wash...

    Yeast

How low will the yeast go to? 1.070 doesn't seem like a very high potential ABV? But I have only worked with high gravity meads in the past, so I am in unfamiliar territory lol

    Yeast

Hey ya'll, I was wondering if anyone has ever used that Red Star DADY yeast?? I was scrolling through Amazon's selection of yeast strains and saw it. It said it would hit 22% before slowing down? Also has anyone ever used turbo yeast? I have only seen mention of it once and it wasn't good, so I...

    First attempt

The cloves and cinnamon isn't necessarily a problem, though it does depend on your taste. I use 4 cloves and 6 (3 or 4 inch) cinnamon sticks in one gallon for one of my recipies. But, as stated a lot on this forum, it is easier to add something later than to take something overpowering out. Hope...

    Fining agents

How long have you usually waited before bottling? I was hoping to bottle fairly quickly, but if I have to wait a bit longer I suppose it won't be the end of the world. My half gallon should be done in about 2 or 3 weeks, vs another month and a half for the 5 gallon, so I should have time to test...

First Mead in Underway! Triple Berry.

As Kent88 stated, degassing is meant to remove co2 and get the yeast back into suspension rather than sitting on the bottom for a better and stronger fermentation. Nutrient also helps a lot, particularly in the beginning in my experience to get things rolling. My first batch took 3 days to get...

    This weekend’s work

Awesome, I have some honey left over from my last batch, I may try this if I can find a pint jar and will update later! Thank you! [emoji1] [emoji482]

    This weekend’s work

So attempt to start a pint starter, let it ferment, taste and if it's good then use it as a starter? Also, assuming all fares well - must ferments and tastes good - how long can a starter like that survive to be used later?

    This weekend’s work

Sorry to derail, but how likely is it to start fermenting on its own? Is it hit and miss? I would like to try that with the local red clover honey I get here in WA.

    Fining agents

Hm, okay. Thanks for the advise, guys! I have a 5 gallon and a half gallon of the same recipie going at the same time, so maybe I will test the Super-Kleer on the half gallon first, and if all fares well I will use it on the 5G.

    Fining agents

Hey y'all, quick question. My last batches I haven't been too worried about 100% clearing my mead, but as this batch is meant as gifts, I am trying to go all out - getting custom labels, wax sealing and even got a costom disign on a wax seal to press my mark into the wax. So I was looking at...
