    Workable, reasonable amount of space between taps?

    Yeah I think planning to use those handles is going to dictate. Mine are 2.5", and I would have made them wider. I think what I did at the time was measure the black collars that came with the taps plus about a 1/4". With those, I'd take your handle width and add about 1/2".

    Primary Dry Hop

    During primary fermentation, I think you'll probably lose a lot. But I do add mine in the primary fermenter, when it looks like activity has mostly stopped. Then after 4-7 days that's when I move to secondary to clear.

    Session Brewers Method Question

    My beers tend to ferment out quite a bit, hardly ever over 1.010. I'm thinking it's my lack of a proper mashout step. I just really keep the OG low on my lighter "session" beers. Which is usually a dry pilsner so it works out pretty well.

    My girlfriend has made a number of delicious beef pies using my Guinness clone. She makes the crust herself so it's one of the most homemade things around.
