    DIY Stainless Steel Fermenters

Know any metal workers, specifically some aircraft sheetmetal types? They could be riveted on, with some stainless solid rivets. They swell and seal, no O-rings or the like per your concerns. 1/8 dia. rivets would hold the latches from now on.

    Anyone use charcoal for fire?

3 bags of charcoal. Build a separate fire with the charcoal, and shovel it under the kettle as needed to maintain temp. Bricks or cinder blocks, or a car wheel trimmed for charcoal access and airflow, will support a kettle.

    Brewery Tours in Ecuador

Buy yourself a Pilsener @ any local Tienda, and enjoy it for what it is. I hear it's not a lot different @ the brewery.......:D That said, ( and don't shoot me!), a Budweiser that is brewed in Guayaquil is worlds apart from their product Stateside! In Quito, my favorite is Two Barrel Brewing...

On your 3 roller.........Were there any setup pains to make it function well? For example, any problems noted whilst bolting it down or the like, throwing the roller alignment out, etc....? I ask because I have an Ecuadoran friend with a 3 roller Monster Mill, and he's mentioned some setup...
