Chocolate stout = three years in bucket. What should I do with it?

I really need to know what the outcome here is. I've got a stout fermenting now, maybe I should leave it in the bucket a bit longer. -- Nathan

It's time to bottle, but of course, it's complicated

Just using a hydrometer actually, so it sounds like I'm a bit on the high side. I think I may just let it sit in the bucket while I'm out of town and bottle it when I get back. -- Nathan

Oh and extract was liquid. -- Nathan

It's time to bottle, but of course, it's complicated

Thanks all, I ended up with 5 gallons. Grains were soaked at 155 degrees for 45 minutes with on packet of hop pellets added right away and one added in the last 10 minutes of the boil. I chucked the dextrose in at the very end. Yeast was Safale US-05. I'm not sure how much dextrose they...

It's time to bottle, but of course, it's complicated

Unfortunately my failure to take an OG reading is not helped by the recipe not including an estimated OG or FG. I have the ingredients but I haven't been able to wrap my head around the math to figure out these estimates but I do have the ingredients. 1.5lbs Domestic 2 row .5lbs Roasted...

It's time to bottle, but of course, it's complicated

This was not quite meant to be an imperial stout, but, as it's my first brew I managed to screw up a number of things, one of which being dumping my priming sugar into the boil assuming it was meant to go in (instructions, how do they work?) the other being not taking an OG reading. Given it was...

It's time to bottle, but of course, it's complicated

Your logic makes my laziness all the more apparent. I think I will still attempt to bottle form this bucket for the sake of simplicity. Took a gravity reading last night 1.021, a little high, but given my idiot move of adding all my bottling sugar to the boil, I probably started off with a...

First attempt and of course I screwed up - can I salvage it?

Thanks! As long as the gravity reading is the same Sunday, I'm planning to bottle early next week. -- Nathan

First attempt and of course I screwed up - can I salvage it?

Oh and here's a pic the s/o took. I guess I could grab some beer with my wine thief but I think I should just leave it alone until Sunday. -- Nathan

First attempt and of course I screwed up - can I salvage it?

Alright so it's been sitting in the fermentor for four weeks now. I took a gravity reading tonight 1.020 corrected for 70 degree temp of the fermentor to 1.021. From what I've read, this might be high, but since I was dumb and didn't take an OG reading, I can't be sure. Of course I'll take...

It's time to bottle, but of course, it's complicated

I've considered this, but I'm already out of storage in my apartment (whopping 640sq ft is all I have) so I'd prefer not to acquire more clutter, which I'll admit is me making things harder on myself. I'd kill for a basement or garage but something tells me the HOA would frown on a fermenting...

Most sanitary way to test beer

I'm planning to take a reading tonight to see where things are at (beer has been fermenting for 4 weeks). My beer is fermenting in a bucket and the whole take the lid off drop in the sanitized hydrometer etc seems like the best bet. My only concern is that my apartment always has windows...

It's time to bottle, but of course, it's complicated

Thanks! The bucket of course, is opaque so I can't tell for sure, but it looks like the trub may be sufficiently below the spigot so hopefully it'll work out, if not, I'll plan to drain it off. -- Nathan

It's time to bottle, but of course, it's complicated

Well, my stout has been sitting in primary for just about 4 weeks now. This was my first beer a several dumb things were done by me. Most notably, not taking an OG reading and dumping the wort into my bottling bucket as opposed to my carboy. Given that it's in the bottling bucket already...

First attempt and of course I screwed up - can I salvage it?

Only problem would be figuring out where to store the tub. I'm currently out of space and don't even have anywhere to put my boil kettle or fermentor when not in use. Of course I suppose the obvious solution would be to just always be brewing... :-D -- Nathan

First attempt and of course I screwed up - can I salvage it?

Thanks everyone! I given that fermentation has been slow sounds like waiting four suspenseful weeks is my best bet before thinking about bottling. As far as keeping temps down, my apartment is a mere 640sf shared by two people, a cat, and a dog so a cooler won't really work. I'll have to look...

First attempt and of course I screwed up - can I salvage it?

Sounds like I've gone and started another Did I Ruin It thread, oops. The entire bag they included which I presume was the default amount of dextrose needed to prime 5 gallons for bottling. Temp control has been decent, my apartments ambient temp is generally between 63 and 70, this week...

First attempt and of course I screwed up - can I salvage it?

Well this is embarrassing but the good news is, Google searches suggest I'm not alone in screwing up some aspects of my first brew. I'm brewing a dry stout and followed the recipe for the boil to a T... until. I found myself with a bag of dextrose that wasn't on my list. Foolishly I decided I...
