IPA with Saison Yeast - Opinions please

I haven't taken an updated reading yet, but my OG reading after putting the wort in the fermentor was 1.072. My recipe didn't have a target OG or FG (forgot to ask the LHBS guy) but from what I searched this seems fairly good for a Belgian IIPA. I'm shooting for around 8% abv so hoping for...

IPA with Saison Yeast - Opinions please

Glad to hear that, guess the bottles just needed more time to soak up the carbonation? I'm about two to three weeks away from bottling myself, looks like the yeast wrapped up their work (been eight days) so now I'll just give them some time to clean up their mess and hope things clear up a bit...

First Home Brew Completed - A Few Questions

This, I was starting to feel self conscious (ok, not really, but, curious) about the seemingly minimal head on my stout (also my first brew). After paying more attention to commercial brews my head isn't far off from most other dry stouts. Then I thought about it more, other than a little foam...

    Yeast growth in carboy neck

I'm pretty sure this is a case of RDWHAHB, but I have to ask. I took a OG reading from my carboy which resulted in the neck being sticky with wort. When I pitched my dry yeast (I know, second brew, not quite at the point to make a starter yet) stuck to the neck. Brew has been going nicely and...

Broken Glass Carboy Horror Stories Compendium

This thread has me giving the carboy that came with my brew kit (xmas present this year from my s/o) a questioning glance. Currently fermenting 5 gallons in there but I'm wondering if I'll move to brew buckets after this. Has anyone tried using a clear ductape wrap or something as a means to...

    Do you clean the bottles?

Oh cool, I've avoided using anything but a washcloth on my bucket, have you found the Dobie to be safe for those? It's my favorite cleaning sponge for anything else. -- Nathan

IPA with Saison Yeast - Opinions please

This is only my second brew so I'm not quite ready for that yet. I'm hoping to leave it sitting in primary for 4 weeks or so (FG reading determining that of course) and then bottle. Belle can go as high as 90 but from what I read in a thread on here about that yeast, I might not get what I want...

IPA with Saison Yeast - Opinions please

I used Belle Saison, it was up a bubbling the morning after we pitched (pitched around 11pm). I swap cooled it for the first 12 hours and then let it warm up and now have it wearing a hoodie. It was warm to the touch when I checked on it last night and bubbling consistently with lots of swirling...

IPA with Saison Yeast - Opinions please

I've been following this thread and was inspired to do something similar. My brother was in town and wanted to brew but the ambient temp in my condo is 70 - 80 most of the year, and October is warm in SF. So far so good, the bubbles out of my blow off smell hop-tacular. -- Nathan

Value in raising temperature after primary?

Raising the temp can help rouse the yeast in order to get them to finish any remaining fermentation as I understand it. -- Nathan

    Do you clean the bottles?

Like most here I rinse them immediately after pouring. My dishwasher has a sanitize option so I throw the bottles in there (without soap) to sanitize them, then they get pulled out 1 by 1 to fill. -- Nathan

Starter Equipment Kit Question - When this all began!

I got a starter kit as a xmas gift from a local homebrew shop. I took the certificate in and they grabbed all the gear and then let me pick what sort of beer I wanted to brew. That batch is finally in bottles (what can I say, I move slow) and I'll be visiting them soon to get ingredients for a...

It's time to bottle, but of course, it's complicated

Probably shoulda been clearer :-) I used the wand attached to my bottling bucket (which I'd mistakenly fermented in). I have a bar height table and a counter height stool which let me sit at the perfect height and bottle away. I had a towel down to catch any spills but after the second bottle I...

How long does it take to get a good carbonation in the bottle

I used carb drop in my first batch as I mistakenly fermented in the bottling bucket and didn't want to both with a bunch of racking. The beer had been in the fermentor for nearly 8 weeks. It was a stout which I bottled into bombers. I was seeing activity in the bottles within a week, and when I...

    Refrigeration After Bottling

Thanks, I'll double check but my place is west facing and tiny so it heats up quick and holds it during the day. I don't think even a dark corner in a closet is safe. I'm seeing more and more reasons why I should get a small kegerator or a wine fridge. -- Nathan

    Refrigeration After Bottling

Say I have s stout which tastes good, but I suspect a little green (lacking some of the sweet maltiness I'd expect, but still very drinkable) so I'd like to age it. My condo is generally in the 70s but can get much higher (80s) on hot days and we have no a/c. To age these bottles now that...
