    You haven't noted but the filled bottles need to sit @ room temperature for 2 weeks to carbonate other wise the cold refrigerator temperature will arrest the yeast/sucrose action.

    My system evolved over time. The 1st evolution was the Avery disk labels for legible recording of the brew data. The soda cases were the final solution to the cardboard 6 pack cartons. I'm just lucky that I didn't experience a collapse and big mess stacking the cartons.

    I use color coded caps with labels for specific batch information. Hop cone and green for IPA/pale ale, American flag for brown ale, etc.

    Ok. I am currently 30 days in the bottle, but will continue to monitor as I am no hurry to get results. My immediate next step is to repeat the brew with 05 yeast and same 3/4 tsp corn sugar to see results. Application of the scientific method; results will be same; results will be different.

    I have been bottle carbonating for quite a while now. I have found 3/4 tsp corn sugar to be safe for 12oz bottled light color hopped ales fermented with 05 yeast. I just bottled a brown ale @ 7% fermented with 04 yeast that hasn't carbonated to suit me. Again this was 3/4 tsp same as always...

    Bottled 10 gal (96 bottles) of 2 varieties of IPA w/ Munich or Vienna malt. The darker one (Munich) had Centennial in the boil, while the lighter is all Citra and Mosaic. Closet is at capacity now so likely have a bit of down time before another brew day .

    I wonder what bottling is like from the Uni? As you can see from my setup, I am bottling from counter height and gravity does the job. It appears that to bottle from the racking tube the height is much lower. Is the Uni stable enough it could sit on something like the brew cube to raise it up a bit?
