    High ABC but light-med body?

If I wanted to end up with a high alcohol beer with a light to medium body (like say a pale ale) could I just follow the recipe for a pale ale but add a bunch of candi sugar, assuming the yeast are up to the task? I'd like to make a high ABV brew next but don't want a malt bomb like the...

    Does this sound right?

Well, it's been in the bottle for 2 weeks now, I put one in the refrigerator this morning and just cracked it open a few minutes ago. I am actually quite impressed. It is in fact very similar to a Bass Ale. Slightly less body and slightly more hoppiness but overall very close. And very good...

    Cleaning Glass Carboy

I bottled my first batch this past Sunday. When I was done I partially filled the carboy with water, swirled it, and dumped it just to get the heavy stuff off. There was still that thick nasty ring from the krausen. Then I put a scoop of oxyclean in and filled it to the brim with water. Let...

    Does this sound right?

Thanks for the info. I was wondering what the standard time for carbonation was. Also, do you normally "see" anything happen when it's carbonating?

    Does this sound right?

Ok, it's been 4 days since I bottled. I'm not seeing any bubbles or krausen or anything in the bottles, no sign of activity at all. How do I tell if it's carbonating?

    Does this sound right?

Bottled it today. The OG-FG chart in How To Brow shows it to be 4.6% ABV. Best of all, it looks, smells, and tastes like beer. Obviously flat and warm, a little lighter than I expected (almost like an American Lager) but no off tastes. I can't wait to try it after 2 weeks of bottle conditioning.

    Which bottles can I use?

Ok, cool. I saw another thread where someone was saying they found it impossible to cap Stella Artois bottles, and I have a few of those in the mix too.

    Which bottles can I use?

Planning on bottling tomorrow. Soaking my empties in Oxyclean/Water right now. I noticed the tops of the bottles all look different. I have a bunch of Sam Adams, Strongbow, Woodchuck, Samuel Smith's (different sizes), Newcastle, Lancaster, etc. Is my capper going to work on all of...

    Does this sound right?

Brewed my first batch about two weeks ago, using the deluxe starter kit from Northern Brewer and the English Pale Ale recipe kit. Fermentation started a day or so after I pitched. Developed a nice foamy krauesen, which lasted about a week and then subsided. Then there was a thin crusty...
