    So I finally got everything done last night. I transferred the wort to the carboy after it had cooled (probably well beyond 90 degrees, actually) Is that a problem that it cooled so much? I checked the temperature of the full carboy (3.5 gallons water, 1.5 gallons wort) and it was at 64...

    Thanks for the help! I messed up initially by not taking a reading of the wort, so I'm not sure what the OG was. I am brewing an abbey ale. I did sanitize the thief before inserting it into the carboy. So hopefully I'll be fine with that. So, some of you suggest waiting before bottling...

    Then why do my instructions say to go ahead and bottle after 10 days? I want to make sure I get as tasty of a beer as possible, especially for my first one. But, as assumed, I'm anxious to taste...but I'm not willing to compromise the process.
