Yes, you should get a noseful of co2. Think of it a a protective layer of gas on top of your beer that keeps the o2 out.

I could swear that I'd already posted in this thread, but it must've been another. My worst commercial beer is a tie for first: Dogfish Head 120 (sorry hopheads, and I'm one, but I hated that overpriced crap.) Sam Adams Cranberry Lambic. I won't be giving either of those a second chance.

Hot, sugary wort is a paradise for Nasties. The sooner you can cool it, the sooner you can start fermenting.

I honestly don't have enough experience to advise you about a 30 min. boil for a kit that doesn't require a boil. Sorry. :( But if you want my opinion, i don't guess it wouldn't hurt. Usually bittering hops are boiled for more like 45-60 minutes. Hops that taste yummy are boiled later, like 15...

Is the extract hopped already? Does it use ale or lager yeast? Adding the hops sure couldn't hurt, in my opinion, but don't expect an IPA. If the extract is hopped already, your kit probably doesn't call for a boil. If there is a boil, you could use some for extra bittering. You'd still have...

Thanks, guys! If I don't need a starter, then I won't bother this time. The OG of the extract kit (NB Dead Ringer) is 1.064, and NB suggested a starter. It would be my first, but if it's not necessary, I'll skip it this time. :mug:
