    If you have some extra malt (dry or liquid, or left over from last time) - make a starter. Worst case, the yeast are dead, but at least you'll have only wasted a starter and not a full 5 gallons. Best case, you'll have more, healthy yeast to pitch.

    I think that temperature drop is the best reason to add it at flame out, not at 10 or 15 minutes as some suggest. Don't stop a good boil. Besides, why not put that temperature drop to some good use - like helping to cool the wort after the boil - rather than having it be a "problem"?

    You can use any glass container you'd like. Just make sure you sanitize it before use. You won't need an air lock, just some sanitized aluminium foil to keep it covered.

    Light Ales?

    A honey ale might be a good choice. Usually not too hoppy, nor too malty. The honey makes for a "lighter" flavor. Kölsch can also have a lighter flavor. You could also try making a Kölsch but using a different yeast strand. Just some thoughts.
