    I use Muntons Pale Malt. Grainy is good in some styles but it just seems out of place in the pale ale.

    I have fairly soft water here on Long Island with a pH of 7.2. I usually treat my water with a little gypsum and table salt. I'll pay more attention to the mash pH next time. Thanks for the tips.
