    Howto: Capture Wild Yeast

My results from the mason jars were that the two smaller ones became contaminated so I threw them out. The raspberry, blueberry and cherry showed weak signs of yeast production. The raisins seemed to outperform the 3 others. So I harvested and washed it last night for a minimash all grain...

    No Trubble - Tripel X

I got a white film on top of it and it looks like acetobacter infection. I was told by someone else to see if a fruit fly had gotten in there. And I spotted one tonight apparently exhausted from the doing the Belgian 200 meter Olympic backstroke. He said the beer would probably taste fine...

    No Trubble - Tripel X

I repitched with Safale US-05 about 14 hours ago and there is zero indication of advancing fermentation. So I am thinking you are right about the sugars being the problem. That being said it's still a very good tasting beer at this point. I will go ahead and bottle once it settles out in a few...

    No Trubble - Tripel X

Well I was hopeful but here we are and the gravity is 1.032 still. I went to beer store to get caps and talk about what was going on with it. They suggested pitching Safale US-05 as a last resort. So I picked up a pack. It is my first "starter" yeast recipe that I've done as I was trying to...

    Howto: Capture Wild Yeast

Understand. Thanks. They are fermenting a 1.060 wort at the moment. Nice trub cake at the bottom. Thanks for letting me know before I spent time on this one. I will have to tell whatever is in the jar fermenting that wort to knock that crap off and quit trying to be real yeast...

    Howto: Capture Wild Yeast

I've been trying to catch up on this thread the past couple of days but only made it to page 16 so far. I have an experiment going with wild yeasts that I am going to be trying hopefully in the next week or two in some mini wild beer experiments. I put a picture in the post. From left to...

    Yeast Nutrient Substitution

I know it's an old post but just wanted to clear this up for anyone else looking. The Brewer's Yeast Tablets by Spring Valley are not dead yeast. I'm currently cultivating them in a high gravity wort experiment and they are alive and well.

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

We got a sudden cold snap and the carboy dropped down into the low 60s. It was kinda cold crashing out and clearing up which is why I thought it was done. It's back up to around 74-76F after getting it off the floor while maintaining the heating pad under it. It's nice and cloudy once again! :0)

    No Trubble - Tripel X

@Calder: It looks like the problem on the stuck fermentation was a cold draft on the carboy. I elevated it 3.5' off the floor and the temp is stable between 74-76F. The carboy has clouded again and there is a small amount of carbonation that can be seen at the surface. Time will tell but I...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

I don't have adequate temperature controlled room for making beer during winter. I got a stuck fermentation on my Tripel X recipe I made a couple of weeks ago. I got a heating pad on low underneath of it. Hopefully it will finish out even though it may take some time. The tell tale signs of...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

So I originally consumed this too early which made me think it was ****. Now after aging it for a while I find that I'm almost out of it! And to top that off it's too cold outside to do another one right now. :(

After two weeks fermentation is stuck at 1.034. Need to figure out how to get it restarted. Already raised temp and swirled three times. It's just not taking off.
