    Dry hop with Williamette?

How did the IPA turn out? I am dry hopping my current pale ale with williamette because I wanted something different after using cascade to dry hop another pale ale and my Brown Lightning Ale. My LHBS only had cascade, perle, and williamette in whole leaf form available.

    Magic Hat brewing

No. 9 is definelty an apricot flavored ale, IMO not their best offering at all. Try their Lucky Kat for a more well balanced pale ale (they call it an IPA). The current spring seasonal HIPA (an IPA) is ok, it could use more malt presence. I will say their winter seasonal Roxy Rolles is...

    Better Bottles vs. glass carboys

I picked up the BB on my LHBS's recommondation. I was told they made a Flemish beer with live, active bacteria in a BB, cleaned it up and out, then made a pale ale in the same BB which came out amazing. I use my BB for apfelwein, and my glass carboy for dry hopping, the plastic buckets work...

DME or LME first in a late extract addition boil?

That's a great call on using the kitchen wisk for DME additions, I always spend way to much time and lose btus when adding the DME and stirring like crazy with a spoon.

DME or LME first in a late extract addition boil?

Made this brew last night and it looks like I made the right call. I added the DME before the boil and the LME at 10 minutes to keep it free of my hop additions. What are your opinions on adding the LME at knockout instead and letting it sit for 10 minutes to pasturize such as Palmer...

    North Buffalo

The "Lake Effect" from Pearl Street is good, I agree. I also like the "Trainwreck" (amber) and "Canal Street" (oatmeal stout). The food there is excellent as well, and they do a great Sabres pregame party buffet. fyi will trade Mighty tacos for Garbage Plates!

DME or LME first in a late extract addition boil?

I am doing a pale ale recipe that calls for 3.3 lbs. light LME and 3 lbs. amber DME added to the wort prior to boiling (after steeping the grains). I would prefer to do a late extract addition such as Palmer and HBT suggest for better results. Which extract should I add first after steeping...

    Bottling Tips for the Homebrewer

SWMBO's brother and I just bottled two batches this past week using your tips. We did the bottling at our respective houses with our own equipment that we upgraded. In both cases we did not use the clamps you recommended and had no issues what so ever with any leakage with either bottling...

    Man, I love Apfelwein

Apfelwein noob here, just made first 5+ gallon batch! Used 7 96 oz bottles berkley & jensen apple juice and added about 2.5 oz extra dextrose to remain true to Ed Wort's recipe. Two weeks from today.......and two weeks after that......
