    Joe's Ancient Orange Mead

I don't think you have to boil the water and honey, I never do. But I do warm all the honey and a couple gallons of water to make it easier to handle once I get it in the carboy. Thinning the honey a bit makes it easier to incorperate all the ingredients evenly. Plus I buy my honey in half...

I did a blueberry/vanilla bean variation (an idea I got from a poster on this forum) and just got it in the bottle. There was a little left over in the bucket so my husband and I had a taste and it turned out very good. Here's what I did: 15# Sue Bee honey (equals about 144 ounces) 4 gallons...

Just wanted to post a thank you to DeadNuts Brewing for the blueberry vanilla variation idea. Just bottled a 5 gallon batch and man is it good! Just lovely. We loved it so much we will be starting another batch soon. Cheers!

Just started my third 5 gallon batch of JOAM and a 5 gallon batch of a blueberry-vanilla variation. My last batch of JOAM I used 15# of honey and it turned out a little sweet for my taste. This time I did 13# of honey (a gallon) to 4 gallons water. For the blueberry - vanilla I went with 14#...

Both batches that I have done I didn't wait for the fruit to drop. Once it cleared, I bottled it. Worked out just fine. Tastes lovely, smells fabulous and will definitely get you crunk if you're not careful.

I just bottled my 2nd 5 gallon batch of this recipie. I read a great peice of advice on this chat room: Set the fermenter out on the counter where you will do the bottling and don't move it for about a week. Then siphon the meade into your bottling bucket and let it settle over night. Next day...

I aged mine two months in the carboy and a month in the bottle before I drank any. It was alright then. But the longer the better. If I'd have let the bottles sit for another month I beleive it would have been primo but I just couln't stop drinking the stuff. I followed the recipe exactly.

Made the JAOM recipe (4 gallons) for a Renaissance wedding. I followed the recipie exactly and it turned out awesome. Medium sweet, with a great aroma. And it was a hit! I figured no one would like it. But 20 bottles are gone! (well, 'cept 1 I kept for me.) But I tell ya, you have to be careful...
