    Is it too late to try and turn a holiday ale before Christmas? I could brew it tomorrow probably but thats only about 7 weeks. I know, you shouldn't rush things. This is one time I am actually not procrastinating though, I just got started brewing and the idea just kinda occurred to me.

    I love Hop City!! Sometimes the wife and I take "Beer Trips" to Birmingham. Hit up Avondale, Hop City, Good People. Try to hit Avondale near meal time and eat at Saws Apparently there is a brew store in Pelham called Alabrew. Have you ever been?

    Bottling question

    I would order another bottling bucket, rack into that. They're cheap and then going forward you have a fermenting bucket, carboy for secondary if needed, and a bottling bucket. Its not like you will never need another bucket any way.

    Bubbling like crazy and a temp of 68 per fermometer. Wife said it was 64 at 3pm yesterday. I tossed in a fresh icepack in case the rapid fermentation was heating things up too quick. If I can keep things between 64-68 for the next few days, that should be a decent range for the S-04 yeah...

    Scorched at bottom of pot

    I just did that as well. I'm doing an Imperial Nut Brown Ale. Its really dark so I'm hoping it isnt an issue. Burnt sugar is just caramel, right?
